{Healthy} Stuffed Sweet Potatoes

One of our very favorite healthy meals are Stuffed Sweet Potatoes. This can be a very quick meal with just a little bit of preparation.  Need a new meal idea for your family... this one is it.  Our kids love this meal along with the hubbies! This is perfect for a cold winter night to warm you right up!

Sweet potatoes are low in calories and high in Vitamin A.  They have lots of fiber and potassium and many other health benefits to them.  Try out our delicious Stuffed Sweet Potatoes!  Continue with us this week for more healthy food ideas for your Family.

Stuffed Sweet Potatoes
Recipe feeds 4 people

4 sweet potatoes
2 pounds of Ground Beef (you will have extra to eat taco's the next night)
1 packet of Taco Seasoning
1-2 plain Greek yogurts (about 1 cup)
1 avocado
Asparagus (or any green veggie for a side)
(saran wrap if cooking sweet potatoes in the microwave, foil if baking)

Microwave Potatoes:
Rinse off sweet potatoes and poke with a knife and wrap each potato individually with saran wrap. Microwave cooking time is around 4 min each for a long skinny sweet potato, cooking time will vary depending on the size of sweet potato.  You will have to test if you are wanting to cook all four together in the microwave I would guess 10-15 min. depends on size of potatoes and watts of microwave
Bake the Potatoes:
Preheat oven to 400 degrees.  Rinse off potatoes and wrap them with foil.  Place on baking sheet and bake for 45 min.

While the sweet potatoes are cooking, in a frying pan brown your ground beef. While browning, slice and chop your avocado and set aside. Once beef is browned add 2/3 cup water and taco seasoning, simmer for 2-3 min.

Once all potatoes are done take them out and turn oven to broil, cover baking sheet with foil and place asparagus into pan.  Put olive oil, sea salt, and a little black pepper onto asparagus, make sure the oil and salt is evenly coated by stirring with hand around the sheet. Place in oven on broil for around 5-8 min, watch carefully once a little greener and crispy on the edges then take out of oven.
Once everything is done cooking place potato on the plates and slice open potato and load it up with beef then 2 spoonfuls of yogurt, and a little chopped avocado. Top with a little sea salt and black pepper. Place cooked asparagus and WaaLaa dinner is served!

I always cook extra ground beef then my meat is ready for taco's the next night for dinner!
